More a cultural trail than a single dish, the Adana kebab experience is concentrated in the historic bazaar core -around the Ulu Cami, the coppersmiths' (Kazancılar) quarter and the Kabasakal grill lane.
Culinary Heritage
Adana's cuisine was shaped by the fertile Çukurova plain, nomadic Yörük traditions and a layered past running from the Ramazanoğlu emirate to the Ottomans; the city is said to hold more than 500 local dishes. That depth made Adana Türkiye's candidate in the gastronomy field of the UNESCO Creative Cities Network: after passing the preliminary review in Paris, its bid was considered at the October 2025 general conference in Samarkand.
The Adana Kebab and the Flavour Trail
The star of the trail is the Adana kebab, which takes its name from the city. Meat from young lamb is hand-minced with a twin-bladed cleaver called a zırh, kneaded with tail fat (about one part in five) and red pepper, pressed along a wide flat skewer and grilled over glowing charcoal. Adana kebab received geographical-indication protection in 2005, with production standards policed by the Adana Chamber of Commerce, so a 'genuine' Adana kebab must follow the defined recipe and origin. It is served either as a porsiyon (with sumac onions, charred pepper and tomato, and lavaş flatbread) or as a dürüm wrap, accompanied by spicy şalgam and ayran.

Access is easy: the bazaar is central, about 5 km from Şakirpaşa Airport, near the rail station, and served by the metro (İstiklal/Kuruköprü stops) and taxis. Coaches use the Sabancı Mosque/Merkez Park car park and groups walk in, as buses cannot enter the narrow lanes. The ground is mostly flat, though historic paving makes wheelchair access only partial; larger restaurants are more accessible. Spring (April-May) and autumn are ideal; summer is very hot, yet evenings suit an open grill. Peak season means weekends and the Adana Kebab and Şalgam Festival held each December. The recommended route is to time the old-core walk for midday and finish at a Kazancılar-Kabasakal grill.
